Six estate wines from four blocks on one hillside. Every bottle is poured in the tasting room before it goes home with anyone.

A year on the hill,
from pruning to press.

Tomas Reyes dry farms all 28 acres, so the calendar bends to the weather. This year the Sauvignon Blanc came in on September 2 and the Syrah is next.

Feb

Pruning

Tomas and a crew of six cut every vine back to two buds, by hand, often in the rain.

Jun

Fruit set

Flowers turn into hard green berries. We drop a third of the clusters on the Hillside block.

Aug

Veraison

The Syrah turns from green to purple in about ten days. The bird nets go on.

Sep

Harvest

Picking starts at 4 AM under lights so the fruit reaches the barn cold.

Oct

Crush

Whole clusters go into open bins in the old barn and get punched down twice a day.

Nov

Rest

Leaves turn, the first rain comes, and the new wine settles into barrel for two winters.

Stools at the long oak bar, in the same barn where we fermented our first 400 cases in 2001. Walk in any day from 11 AM; the last flight pours at 4:15.

“We pick the Syrah by taste, not by the calendar. Some years that means the last week of October.”
